Cabo's mission is to create the most authentic Mexican Restaurant in Edinburgh
Cabo’s mission is simple – to bring the true taste of Mexico to the heart of Edinburgh. Our menu is a celebration of Mexico’s diverse culinary heritage, from the bold, smoky flavours of the highlands to the fresh, zesty dishes of its sun-soaked coasts. Every recipe is inspired by generations of tradition, crafted with respect for authentic techniques, and elevated with the finest Scottish produce and carefully sourced Mexican imports.

Our inspiration comes from the vibrant street food markets of Mexico City, where sizzling grills, freshly pressed tortillas, and zesty salsas fill the air with energy and flavour. At Cabo, we capture that spirit, blending authentic techniques with the best local and imported ingredients to bring a true taste of Mexico to Edinburgh.

We partnered with some of the most talented interior designers in the country to create a dining space that’s almost as memorable as our food!
We wanted Cabo to be more than just a place to eat – it had to be an experience from the moment you stepped through the door.
Our high ceilings, warm lighting, and rich textures create a sense of occasion, while vibrant accents and thoughtful details nod to the spirit of Mexico. Every element, from the statement bar to the carefully curated art, has been designed to complement our bold, flavour-packed menu, making every visit feel special before the first bite even arrives.
