We're serious about creating the most authentic Mexican food in Edinburgh

Mexican cuisine is a vibrant tapestry of flavours, colours, and traditions, shaped by centuries of history and the blending of diverse cultures. Rooted in the culinary practices of ancient civilisations such as the Aztecs and Mayans, it began with native staples like maize, beans, chilli peppers, and cacao. The arrival of the Spanish in the 16th century introduced new ingredients such as rice, wheat, meats, and dairy, sparking a rich fusion of Old and New World flavours. This melding of traditions has given rise to the complex, layered dishes that Mexico is celebrated for today.

At Cabo, we honour these traditions while adding our own creative flair. Our dishes pay tribute to Mexico’s diverse culinary heritage, from the bustling markets of Mexico City to the sun-drenched coasts of Baja. By combining authentic techniques with fresh Scottish produce and carefully sourced Mexican imports, we bring you flavours that are both true to their roots and excitingly new.
